They're extremely porus, and much like eggplant and will soak up all that wonderful garlic, olive oil, balsamic, or whatever is so tasty you're saute'ing them in. Otherwise you're eating a piece of fungus with a lot of air pockets. And I gotta tell you, the first human to pick up a mushroom and say "I'm gonna eat this" had a lot of nerve
Especially if he picked a poisonous one. That's why people take pigs to go mushrooming...they won't eat poisonous mushrooms.
I find the best way to deal with mushrooms is to put them in tea, drink a few cups while chatting idley with friends, and once every thing seems really funny you can start eating handfulls.
