Correct; the eye is symbolic of the Holy Trinity. Worshiping the Holy Trinity is perfectly kosher, in a matter of speaking.
And the "carved image or likeness" rule has never been observed to that extent. Paintings and carvings of angels have adorned paintings, stained glass, carvings, sculptures, etc., have been around for centuries. Hell, Michaelangelo's famous painting of God Himself playing the "pull my finger" trick on Adam adorns
the ceiling of the Sistine Chapel.
